What Kind of Weight Training Do MMA Fighters Do?
Do they do strength training or toning? how many reps and sets would it be that they do so they can stay strong but not get buff and slow there speed down

Heavyweight fighters like Josh Barnett do your standard Olympic style weight lifting. You have to focus on explosive power, ie exploding through a double leg takedown. They still take into account the cardio aspect, ie higher reps/less weight.
Smaller guys either do weights as part of a circuit training workout and more for cardio. The bigger muscles are, the more blood needs to get to them.
